Almond-Oat Cinnamon Pancakes

Preparation

  1. Add the oats, almond flour, almond milk or milk alternative, eggs, sugar (if using), baking powder cinnamon and salt together in a bowl. Stir to combine.

  2. Heat a non-stick skillet over medium-low to medium heat (nuts tend to burn easier than grains, so I suggest starting with a lower heat)

  3. Add a small amount of oil to the pan (coconut, avocado, vegetable, or cooking spray)

  4. Once hot, pour the batter onto the skillet to make dollar-size pancakes (about 3 tablespoons of batter for each pancake). Cook for 2 minutes or until bubbles begin to burst on the surface of the pancakes. Flip and cook for 30 seconds to 1 minute on the other side, or until golden brown.
